Barley Pilaf

A hearty side dish great with beef or chicken entrees.
6 servings
[1] 2 medium onions (chopped)
[2] 4 tablespoons butter
[3] 1 pound mushrooms (thinly sliced)
[4] 1 3/4 cups pearl barley
[5] 6 cup chicken or vegetable broth
1. In large sauce pan over medium heat, sautee onions in butter for 5 minutes.
2. Add mushroom and continue to sautee 5 additional minutes or until onions are translucent.
3. Add barley and broth, simmer 45 minutes over low heat.
4. Remove from heat and set aside 15 minutes before serving.

If using faster cooking barley, match volume of broth and cooking time to recommendations on barley package.
