|
1. Wisk together eggs and milk in a medium bowl and set aside.
2. In a shallow dish, combine 1/2 cup flour, cornmeal, 1/2 teaspoon salt, 1/2 teaspoon pepper, red pepper, and garlic powder.
3. Cut steak into 4 pieces. Dip steaks in milk mixture, dredge in flour mixture, then dip again in milk mixture.
4. Heat bacon drippings in a large cast iron skillet until hot. Add steak and cook 3-5 minutes until browned, turning once. Reduce heat, cover, and simmer for 15 minutes. Uncover, cook 10 minutes, turning once, until crispy.
