Double Dippped Country-Fried Steak
This is not a low fat, low calorie entree but one awesome comfort treat!
4 servings
[1] 2 eggs (beaten)
[2] 1/2 cup all-purpose flour
[3] 1/4 cup cornmeal
[4] 3/4 teaspoon salt
[5] 1 teaspoon ground black pepper
[6] 1 pinch ground red pepper
[7] 1/4 teaspoon garlic powder
[8] 1 pound cubed sirloin steak
[9] 2 tablespoons bacon drippings
[10] 2 tablespoons all-purpose flour
[11] 2 cups milk
1. Wisk together eggs and milk in a medium bowl and set aside.
2. In a shallow dish, combine 1/2 cup flour, cornmeal, 1/2 teaspoon salt, 1/2 teaspoon pepper, red pepper, and garlic powder.
3. Cut steak into 4 pieces. Dip steaks in milk mixture, dredge in flour mixture, then dip again in milk mixture.
4. Heat bacon drippings in a large cast iron skillet until hot. Add steak and cook 3-5 minutes until browned, turning once. Reduce heat, cover, and simmer for 15 minutes. Uncover, cook 10 minutes, turning once, until crispy.
