1. Preheat oven to 450° degrees
2. Coat baking dish with non-stick spray
3. In a small bowl combine bread crumbs, parsley, Parmesan, thyme, and pepper.
4. In another small bowl combine the mustard and garlic
5. Spread mustard mixture evenly over all of tenderloin
6. Place tenderloin in prepared baking dish
7. Top entire surface of tenderloin with bread crumb mixture to form even crust
8. Roast in the center of the oven until a meat thermometer stuck into the center of the thickest part registers 150°, about 23 to 26 minutes.
9. Remove from oven and allow to rest 5 minutes before serving. Cut diagonally into 1/4 inch thick slices. Serves four.
