Green Tomato Casserole
A summertime favorite.

[1] 3 pounds potatoes (sliced 1/4 inch pieces)
[2] 1 large red onion (sliced thin)
[3] 2 pounds green tomatoes (sliced 1/4 inch pieces)
[4] 1/2 cup milk
[5] 2 tablespoons corn starch
[6] 1 teaspoon salt
[7] 1/2 teaspoon black pepper
[8] 1 cup Cheddar cheese (grated)
1. Preheat oven to 350°.
2. Using casserole dish, layer similar to lasagna in this order sliced: potatoes, red onion and green tomatoes.
3. Mix in small bowl milk, corn starch, salt and black pepper until smooth and evenly pour over ingredients in casserole dish.
4. Even spread grated cheese over top.
5. Bake 40 minutes or until cheese is golden brown.
