Oven Fried Chicken
Crispy and flavorful chicken, better than traditional frying, cooked in the oven. Using a cast iron skillet is the secret.

[1] 1 chicken (cut into 8 pieces)
[2] 1/4 cup canola oil
[3] 2 cup all-purpose flour
[4] 1 teaspoon Mrs. Dash
[5] 1 teaspoon Ranch Dressing Mix (powder)
[6] 1 salt
[7] 1/2 black pepper
1. Preheat oven to 425°.
2. Rinse chicken pieces in water and set on paper towels to dry.
3. Pour oil into small bowl.
4. In a separate bowl, mix flour with all remaining dry ingredients until evenly distributed.
5. Brush cast iron skillet with 1 teaspoon of oil from small bowl.
6. One piece at a time: dip chicken in oil until well coated, roll in flour mixture until well coated and place in cast iron skillet skin side down.
7. Bake 30 minutes.
8. Gently turn chicken with a spatula and continue cooking an additional 15 minutes.
9. Let stand 10 minutes before serving.

Before cooking, the coating will appear to be dry ingredients. The oil and juices from the chicken will moisten the dry ingredients while cooking and form a crispy, delicious crust.
