Gazpacho
A refreshing tomato soup served chilled.
4 servings
[1] 6 bread slices
[2] 1 1/2 cup V8 or tomato juice
[3] 1/4 cup apple cider vinegar
[4] 1 cucumber (peeled and seeded)
[5] 1/4 cup olive oil
[6] 1 tablespoon onion (finely chopped)
[7] 1/2 teaspoon garlic powder
[8] 1/2 teaspoon salt
[9] 1 cup ice cubes
1. In blender, add bread slices broken into small pieces and V8 tomato juice.
2. Blend on low speed, gradually adding: vinegar, cucumber, olive oil, onion, garlic powder and salt.
3. Cover and continue to blend 2 additional minutes
4. Add ice cubes and chill until time to serve.

Garnish with a dollop of sour cream, thin sliced lime and parsley or cilantro. Croutons are also a great accompaniment.
