1. In blender, add bread slices broken into small pieces and V8 tomato juice.
2. Blend on low speed, gradually adding: vinegar, cucumber, olive oil, onion, garlic powder and salt.
3. Cover and continue to blend 2 additional minutes
4. Add ice cubes and chill until time to serve.
Garnish with a dollop of sour cream, thin sliced lime and parsley or cilantro. Croutons are also a great accompaniment.
