Holy Bread
Sweet, Middle Eastern bread offered as Holy Communion.

[1] 1 teaspoon sugar
[2] 1/2 cup lukewarm water
[3] 2 teaspoons yeast
[4] 1 cup sugar
[5] 1 cup lukewarm water
[6] 1/2 cup milk
[7] 1 teaspoon rosewater
[8] 1 teaspoon mahlab
[9] 4 cup all-purpose flour
[10] 1 teaspoon baking powder
[11] rosewater for brushing on after baking
1. Dissolve sugar in water and add yeast; let stand 10 minutes.
2. In separate bowl, dissolve larger quantity of sugar in water and milk.
3. Add rosewater, yeast mixture and mahlab.
4. Gradually fold in flour and baking powder to form dough; knead well.
5. Cover and let rise 1 hour.
6. Knead and let rise another 30 minutes.
7. Divide into 6 pieces and roll each into 1/2 inch rounds; decorate pinching with fingers and pressing by fork.
8. In oven preheated to 400°, bake 15 to 20 minutes.
9. Brush with rosewater.
