Veggie Black Bean Chili
Hearty, healthy and quick.
6-8 servings
[1] 1 medium onion chopped
[2] 1/4 teaspoon minced garlic
[3] 1 package meatless vegetable protien crumbles
[4] 1/2 package meatless sausage patties (thawed)
[5] 4 tablespoons chili powder
[6] 1 teaspoon ground cumin
[7] 1/2 teaspoon coarse ground pepper
[8] 1/4 teaspoon salt
[9] 2 cans 16 oz black beans with liquid
[10] 1 can 16 oz red kidney beans with liquid
[11] 2 cans 14.5 oz diced tomatoes with liquid
[12] 1 package 16 oz whole kernal corn (frozen)
1. Using a pizza cutter, dice the defrosted meatless sausage patties into small chunks.
2. In a large stock pan over medium-high heat, stir together the butter, sausage pieces, onions, garlic, and spices for 5 minutes stirring often.
3. Add tomatoes stirring well to get the browned bits up from the pan.
4. Add remaining ingredients, cover pot, and cook 25-30 minutes, stirring often.
5. Serve with tortilla chips, grated chedder cheese, and/or sour cream.
