1. Whisk eggs, yolk, milk, 1/4 cup of sugar in a pie pan or shallow bowl big enough for a piece of bread.
2. Heat a large nonstick skillet over medium-high heat and add 1 Tablespoon of butter. When the bubbles calm down, sprinkle 1 & 1/2 teaspoons of sugar and melt to caramelize.
3. Dunk a piece of the bread in the egg mixture coating both sides. Place in skillet. Repeat with two more slices. Cook until undersides are deep golden. Sprinkle each piece 1/2 teaspoon of sugar, flip and cook until golden.
4. Wipe out the pan with a paper towel, repeat steps with remaining bread.
