Zippy Egg Salad
A spicy version of a traditional favorite.
6 servings
[1] 12 hardboiled shelled cooled eggs
[2] 1 teaspoon salt
[3] 1 tablespoon Basalmic vinegar
[4] 2 tablespoons sweet pickle relish
[5] 2 tablespoons diced black olives
[6] 2/3 cup mayonnaise
1. Coarsely chop the eggs.
2. Mix in all other ingredients.


Options:
1.This will make 6 generous sandwiches. Try hearty wheat bread with a leaf of lettuce on each.
2. Line 6 small bowls with a lettuce leaf. Spoon in 1/6 of salad and sprinkle each with a dash of paprika.
