Craisin Nut Dressing
Vegetarian dressing
8-10 servings
[1] 8 crusty rolls or half a loaf of crusty bread
[2] 1/4 cup craisins
[3] 1 cup chopped pecans or walnuts
[4] 1/2 cup small sweet onion minced
[5] 3 tablespoons butter divided
[6] 1 teaspoon poultry seasoning
[7] 1/2 - 1 teaspoon salt
[8] 1/4 cup chopped fresh parsley
[9] 2 large eggs
[10] 1 cup milk
1. Pre-heat oven to 350°
2. Tear bread into small chunks and place in a large bowel with the nuts and crtaisins.
3. Use a large frying pan over medium-high heat, brown the onions in 1 TSP of butter.
4. Sprinkle in the poultry seasoning, salt, and parsley and cook two more minutes.
5. Pour onion mixture into pan with bread, using a few pieces of the bread to wipe the pan out to get all the flavor.
6. In a small bowl, whisk together the eggs and milk.
7. Pour milk mixture into bowl with bread and stir everything together well.
8. Place in a covered dish or a pan covered with foil and bake for 50 minutes.
9. Rermove cover and baste with remaining 2 TSP of butter.
10. Return to oven for about 10 more minutes or until top is a nice golden brown.
