Pecan Puffs

[1] 1/2 cup butter
[2] 2 tablespoons sugar
[3] 1 teaspoon vanilla
[4] 1 cup finely chopped or ground pecans
[5] 1 cup cake flour
[6] confectioners' sugar
1. Preheat oven to 300°F.
2. Create butter and sugar until very smooth.
3. Add vanilla, pecans and cake flour; gently stirring until well mixed.
4. Shape dough into 1 inch balls and place 1 inch apart on greased cookie sheet.
5. Bake until golden brown, approximately 30 minutes.
6. While hot, roll in confectioners' sugar.
7. After cooling, apply second coat of confectioners' sugar.
