Rich & Tangy Blackberry Cobbler
[Print Version]
An easy cobbler can have tremendous flavor. The secret is a grape juice base for less sugar and more depth.
12 servings
[1] 1 package ready-made (2) pie crusts
[2] 1 quart grape juice
[3] 5 tablespoons sugar
[4] 6 tablespoons corn starch
[5] 1 pound blackberries
1. Set out refrigerated pie crusts to warm to room temperature.
2. Heat grape juice in sauce pan until boiling.
3. Add and disolve sugar.
4. In small bowl, mix corn starch with enough water to be thin and smooth, approximately one-half cup of water.
5. Add corn starch mixture to grape juice and stir until thickened.
6. In an over-safe dish, layer: a pie crust, blackberries, grape juice mixture and top with another pie crust.
7. Bake at 350° for 30 minutes or until crust is golden brown.
