1. Spray large non-stick skillet with nonstick cooking spray.
2. Add onion, carrot, and broccoli. Cook over medium heat 5 to 8 minutes or until crisp-tender.
3. Add thyme, oil, and rice. Cook one minute while stirring constantly to coat rice with oil.
4. Add broth and bring to a boil.
5. Reduce heat to low and cover.
6. Simmer for 5 minutes.
7. Remove from heat and set aside for 5 minutes.
8. Season with pepper and fluff with fork.
